The recipe of the week :
It’s fall. It’s pumpkin time. I love pumpkin everything and I also enjoy cheesecake so when I saw this recipe on Allrecipes.com I had to post it- its very easy and delicious!
Pumpkin Pie Cheesecake
Ingredients
2 packages of cream cheese (I used light)
1/2 cup white sugar
1 tsp of vanilla
2 eggs
Prepared graham cracker crust or 1 1/2 cups graham cracker mixed with 1/3 cup of melted butter
1/2 cup pumpkin
1 tsp cinnamon
1 tsp allspice
Whipped cream (for topping)
Step 1: Combine cheese, sugar and vanilla- beat until smooth. Then add one egg at a time and mix together well.
Step 2: Pour 1 cup of this mixture onto the graham cracker crust.
Step 3: Add pumpkin to the remaining mixture along with the spices. Pour this carefully onto the cheesecake layer that you previously just poured.
Step 4: Bake at 325 for about 40 minutes. Tip, if you put an oven safe bowl of water in the oven while the cheesecake cooks it will help prevent the cake from cracking. Store in the fridge after baking for at least three hours before eating
